Fun Fact: Marinating meat overnight does more than add flavour. The acids and enzymes in a marinade actually begin to break down the proteins on the surface of the meat, which is part of why marinated grilled chicken comes off the grill noticeably more tender than chicken that was only seasoned right before cooking. The sweet spot for most marinades is 2 to 12 hours: long enough to penetrate and tenderize, but not so long that the acids start to make the texture mushy.
