Fun Fact: Capers, the briny little ingredient that makes chicken piccata so distinctive, are actually flower buds, not a fruit or vegetable. They come from the caper bush, which is native to the Mediterranean, and are harvested before the flower blooms, then cured in salt or pickled in brine. The smaller the caper, the more intensely flavourful it tends to be: the tiniest ones, called non-pareils, are considered the finest quality and are what most recipes call for.
